Packed with antioxidants and vitamin A, "Cosmic Purple" carrots have a sweet, satisfying flavor in soups, salads or when eaten raw. "Cosmic Purple" carrots, an open-pollinated variety, have a dark wine-colored skin, but the interior is as orange as a regular carrot. Carrots grow best during the mild temperatures of spring and fall, and they develop root defects and an undesirable flavor if the weather gets too hot as the carrots develop. In the best conditions, "Cosmic Purple" carrots mature in 70 days or less.
